After just a few weeks as dining-room manager of Fish, Alan Gaylan, formerly of NorthSouth, has packed his bags for Kentucky to pursue other business interests. He will be replaced by veteran Fish employees Pamela Wert as dining-room manager, and Arif Mahmud, as assistant manager...Mark's on Henderson, the wine bar with the cozy dining room in the space that was once Pinot's, gave up the ghost recently. Poor business due to Central Expressway construction and family issues apparently forced the decision. Founder Mark Jensen, onetime chef of the Thomas Avenue Beverage Co. and the Green Elephant, pulled up stakes and moved back to Tennessee to be with family...The big Lemmon Avenue space that was Trucker's Midtown Cafe, the road-food cafe, shuttered several weeks ago, and will reopen in December as Tower Records.
