Run Daddy DMC

Some have an uncanny ability to hitch on to listing ships and then bail before the water warps their loafers. But since Michael Costa (FoodStar Restaurant Group) and Dean McSherry (Sfuzzi) launched their consulting firm DMC Hospitality, they've affiliated mostly with floaters, Ketama Tapas Restaurant and Guitar Bar notwithstanding. The latest is Daddy Jacks, the wood-grill concept created by Jack Chaplain. McSherry and Costa have secured the rights to expand Daddy Jacks in roughly eight states, mostly in the south and west. Using the New England Lobster and Chowder House on Lower Greenville as a prototype, DMC will drop Daddy Jacks units in cities such as Austin, Grapevine, Frisco, Houston, Kansas City, Irving, Denver, and Scottsdale, among others, over the next several years.

Shared Vision president Tim Hager says Toscana hasn't sold. Yet. But a deal is imminent, he assures, with three viable buyers in the final stages of inking agreement letters. Hager adds that he'd like to choke the annoying rumor that Mediterraneo is closed. "By the end of the first week of August, I'll have a brand-new patio at Mediterraneo," he stresses, explaining the exterior will be transformed into a replica of a Mediterranean seaside villa garden. "Major project. Right now they're sawing and cutting on my patio."...Peter Tarantino, owner/manager of Tarantino's Mediterranean restaurant near Fair Park, which recently succumbed to fatal plumbing and sewage problems, has snagged a good job--one that doesn't require a sewer snake. He's joined Shannon Wynne's Eight 0 Management Inc., where he will tighten the menus and operations of the Flying Saucer restaurants and the 8.0 Restaurant in Fort Worth. Tarantino adds he may also develop a new concept similar to Tarantino's under the Eight 0 banner...Former Venus Steakhouse and supperclub sous chef Alexander Kybett has taken over the kitchen helm at the M Crowd's Ellington's Southern Chop House in Fort Worth after doing time on the line at The Mercury. Kybett replaces Hallot Parson, who's back at Star Canyon, training to fill the executive sous chef slot at the Austin Star Canyon, set to open in the Stephen F. Austin Hotel in late fall...Former Voltaire front man and manager Kent Ingram is in talks with former Voltaire Managing Partner Khanh Dao to run Steel Restaurant & Lounge, her new restaurant project slated to open in late September in the Centrum.
