Joseph Tillotson, owner of the Barley House, Eastside Grill and Muddy Waters, has just signed a lease for space at 1525 Main Street, one of the oldest (circa 1890s) buildings in Dallas' central business district. There Tillotson plans to launch The Metropolitan, a two-story, 5,000-square-foot restaurant and bar. "We're going after what would really be a very traditional urban bar, very much like the big city neighborhood bars in New York and San Francisco," he says. A tough prospect for a patch of Big D that has yet to bear any resemblance to a big city neighborhood, no matter how much you drink and practice hailing cabs on the corner. Joining Tillotson in this urban hankering is chef Tony Knight, formerly of Lombardi Mare, North South and his own Aransas Pass, which once occupied the space where Tillotson's Eastside Grill now resides. Knight will craft an upscale New American menu, which should be ready for digesting August 1.


Just when you thought steak was dead (which it is technically) comes another upscale Dallas steakhouse serving prime beef and no doubt pricey red wines and sides of asparagus, mushrooms, creamed spinach, onion rings and something with spuds. Perry's steakhouse should open in the former Ruggeri's space sometime over the next few months. Also gestating in the neighborhood is Maximilians restaurant and cigar bar, which will slip into the former Pomodoro/Arcodoro space on Cedar Springs...Buffalo Joe's, a casual New American haunt that opened in McKinney's historic town square a year ago, has linked with DMC Hospitality for a few operational nips and tucks as well as a new menu of steaks, seafood and game. In conjunction with the game-heavy menu, the restaurant is toying with composing a wine list generated exclusively with bottlings from wineries bearing animal names to match the game dishes, such as those from Pheasant Ridge Winery, Duckhorn Vineyards, Quail Ridge Cellars & Vineyard and so on. Yet what might even be more fun is to do it in reverse: Buy the wines first and then craft the menu based on the dictates found on the label. Imagine what you could do with Wild Dog Winery, Black Horse Cellars, Salamandre Wine Cellars and Toad Hollow Vineyards wines...Wait long enough and Peter Tarantino will surface somewhere. After his last stint with the ill-fated Caribbean Red, he hinted that he might open his own tapas bar. But for now he's joined the management team of Al Granoff's soon-to-open eccolo (in the former Toscana space) as assistant manager. Tarantino joins general manager Alessio Franceschetti (formerly of Sambucca) and chef Rick Robbins (formerly of the Stoneleigh Hotel) at the new restaurant.
