There's nothing worse than a crappy burger. OK, maybe a crappy hot dog is worse because it's already made of crap and the crappy ones would have to be made out of something crappier. Anyway, chef Tim Love says there's nothing worse than a crappy burger. That's why the founder of Lonesome Dove Western Bistro opened a burger stand, Love Shack, in the historic Fort Worth Stockyards District. That's why he's opening another Love Shack in Dallas' ahistorical Victory Park. The Love Shack will rise from Victory's green space in mid-spring. This is in addition to Tim Love's Gourmet-to-Go opening in DFW's terminal B for flight carry-on nourishment—gourmet sandwiches, charcuterie plates, that sort of thing. Love's Victory shack will consist of a 400-square-foot glass building with a kitchen and service windows that will open into a covered, fully misted and heated outdoor dining space with some 70 seats. There, Love will serve three one-third pound burgers: the regular ($3.23); the Love burger with shredded lettuce, housemade pickles and Love sauce ($4.15), and the Dirty Love Burger that adds cheese, wild boar bacon and a fried quail egg, sunny side up ($4.85). "That's Mama Jama right there," Love says. Love devoted five months to burger R&D before unveiling his Love Shack burgers—a blend of freshly ground prime tenderloin and prime brisket—to hit the perfect formula and right shape to stay juicy without dried-out edges. Five months? The Shack will have a 60-bottle wine list and bottled beer that you can take with you on your Victory wanders. R&D for that? About five minutes. Which will make more money?
