The Whole Enchilada

My mother was one of those modern women who went to college, had a full-time job and taught her daughter the importance of education and independence instead of how to make prize-winning biscuits. But all the love and support in the world doesn't erase the fact that our "family recipes" are Betty Crocker, or that my culinary chops begin and end with peeling the plastic off and shoving the tray in the oven. Luckily, the Central Market Cooking School Staff is there to pick up the slack with cooking classes. For $50 and two-and-a-half hours, Central Market Dallas will tuck you beneath their matronly wing and guide you through a hands-on lesson in making enchiladas. Class projects will include cheese enchiladas rancheros, stacked New Mexican enchiladas with chicken, chiles and cheese, and spinach enchiladas. The class takes place from 6:30 p.m. to 9 p.m Monday at Central Market, 5750 East Lovers Lane. Space is limited and registration is required. Register online at centralmarket.com/Cooking-School.aspx.
