Yesterday, we brought you a profile of Yosef Schwartz, the executive chef and chief culinary officer of The Fresh Diet, as well as a mini-profile of chef George Shepherd, the local head chef for The Fresh Diet. Today, we asked them both to finish a few sentences for us. Tomorrow, they each share one of their healthy recipes that are heavy on flavor and light on the waistline.

My favorite movie is...To Have and Have Not. Bogey and Bacall. Their first movie together. Classic.

Kitchen tool I could not live without...my crew (Brandon, David, Jesus, James, Paulette, Tabitha and Yanny).

Dallas diners expect...fresh, good tasting food.

One thing that surprises me about the Dallas dining scene is...the diversity of cuisines.

The changes I'd like to see in the Dallas dining scene are...I would like to see Dallas and all Texans more aware of where their food is coming from. Eat less fast food; it's flat out not good for you.
