100 Favorite Dishes, No. 88: The Reuben At The Cock & Bull
For the life of me, I can't get a good shot of this sandwich.

To my knowledge chef Asher Stevens is the only guy corning his beef in-house for a Reuben in Dallas. The results are worth the effort, and I'll always hold out hope that he'll make his own kraut there some day too.
Regardless, the sandwich is put together well. The bread is toasted without too much butter, and Stevens cooks the sliced corned beef till some of the edges are crispy like bacon. It's just so good. Too bad they aren't open for lunch.
