Trinity Groves is blowing up. The announcement that AmberJax will open this Saturday is the third piece of news to come out the the restaurant incubator this week. Chino Chinatown recently announced a December 30 opening and Kitchen LTO released details about the contest for the participants in their next pop up restaurant.
AmberJax is the first Trinity Groves restaurant to turn its attention to seafood, and will combine a full-service dining room with a market, offering seafood and prime beef, along with soups, gumbos, stocks, and sides.

Chef Larry Williams is behind the menu that features "luxury comfort food" based on Cajun inspired seafood dishes like crab cake Creole and shrimp and grits. Throwback trout almondine and filet mignon with hollandaise bring the butter, but the menu also has some dishes that hint at healthful recipes like "almost shrimp scampi."
If you're thinking about stopping in for lunch during the week, but you've got a 1:30 meeting with the boss man, fear not: speedy service is a key, according to the news release. Expect po' boys galore, other sandwiches and tacos and the same gumbo you can take home from the market, too.
The restaurant plans to eventually open seven days a week, but for now is closed Sunday.
