Leading up to our annual Best of Dallas® issue, we're counting down the 50 most interesting restaurants in Dallas. These spots bring something unique or compelling to the city's dining scene, feeding both your appetite and soul.

Visiting La Nueva Fresh and Hot is interesting even if you don't buy anything. The tortilleria has a squeaky, twittering machine that turns out the fluffiest corn tortillas you can get in Dallas — watching the action can be mesmerizing.

The smell of freshly toasting masa is likely to instill some hunger, so good luck leaving without making a purchase. There are sturdy tortilla chips, perfect for scooping up the stiffest guacamole, and a number of freshly made, prepackaged salsas are waiting in the refrigerator. Find the sample station and taste through the run to decide which you want to take home.

And it's a crime to visit this relic and not sink your teeth into one of their guisada verde tacos made with tortillas fresh off the line. The stew is rich, flavorful and packed with tart tomatillos and pork. There are no seats, or even a counter, so you're on your own to find a place to chow down, but you might want to make it close to La Nueva. There's no way you'll make it all the way home with these tacos perfuming your vehicle.
