Just the concept of local ingredients trucked in from the farm every day, the reliance on organic meats and vegetables, and the ever-changing menu would be enough to attract enough of a following to sustain this small Oak Cliff station. But the kitchen is pretty damn good too-even without a deep fryer or walk-in freezer as back-up. The flavors are intensely fresh and the dishes creative without being overwrought. And if that's not enough, the owners designed Bolsa with great sensitivity to the building's historic look and feel. OK, so it's an old auto shop-it still feels like part of a 1940s neighborhood. Open, airy, with a cool "beer garden"-style patio. Really, one of the best new restaurants.
