Chef Avner Samuel has recast his American interpretation of the Michelin three-star restaurant with shaven prices and an emphasis on organic and locally grown ingredients graced with a Tiffany touch and classic French technique. Pan-fried, free-range Good Earth Farm eggs with crispy pancetta, grass-fed beef tenderloin with horseradish pomme purée, and pan-seared soft-shell crab with celeriac carrot salad. Heady and touching in a way that only the mercurial Avner effect can render.
