If you come to Cafe Maya you have to order the habanero salsa. The lively condiment is the work of Sergio Pinto, who opened up the restaurant on Jefferson Boulevard after buying the business from his aunt. The space is charming and decked out in brightly painted reds and blues. Large windows let in tons of light and warm up the space. The menu mixes Tex-Mex dishes in with more authentic Mexican cooking. Cochinita pibil, a sour roast pork dish, hails from the Yucatán Península and shares space alongside enchiladas, queso and guacamole. Smother them all with the habanero salsa and relish in its piquancy. It's good.
