Owner Derek Zara, head sushi chef Chikao Kikuchi and manager Kannikar Sawaddipap continue to retain the most dedicated regulars any restaurant could want. When they moved from the original location, at which Kikuchi worked for 23 years, the mob of customers moved with them, all vying for a spot at the bar at the restaurant's center. Under the guidance of the chef, patrons are wowed with fresh catches of the traditional standards. That means wasabi is only included on request, as it would be in Japan.
