Kent Hahne is the Jeffrey Chodorow of European restaurateurs. Vapiano is a casual dining eatery where the pasta and pizza are made in-house in an open kitchen. Specialties include tacchino piccante (chicken breast, orange-chili sauce, bok choy, bell peppers) and granchi de fiume (lobster sauce, mozzarella, crawfish, zucchini and snow peas). There is a unique method for ordering these dishes. Patrons hop from cooking station to cooking station where they use a swipe card for their selections and pay on the way out.
