Someone at a conference asked me once what Dallas cuisine was like. I suppose the easy answer would have been Tex-Mex, because it probably seems right to someone who doesn't live here, but I put some thought into it and was stumped. Sure, Tex-Mex is a favorite among Dallas diners, but what about the barbecue? Traditional Southern fare? Or the influences from around the world that give us amazing Mediterranean, Italian, and Asian dining destinations? The best I could come up with was that Dallas cuisine is "a fusion", and that's sort of like saying "I like all kinds of music" when someone asks about your favorite band. It's a non-answer.
