Leading up to September's Best of Dallas® 2016 issue, we're sharing (in no particular order) our 100 Favorite Dishes, the Dallas entrées, appetizers and desserts that really stuck with us this year.

Picture this: A heavily-used wok builds up grease and char over a lunch rush of stir-frying. It's set over the gas burner one more time, and in it go wide, flat noodles, shrimp, razor clams, bean sprouts and leafy greens. At the end, the chef piles it all high on a plate, the fried noodles oozing in just the right amount of grease, their sauce perhaps spiked with a bit of fish sauce.

It all sounds like the stuff unhealthy dreams are made of, right? It’s called kueh tiao, and you can find it at Lion City, Plano’s outpost of Singaporean comfort food. The cuisine at Lion City is Chinese by way of the tiny island state, with such joys as sambal chili, mee goreng and shrimp fried rice. But the fried flat noodles, kueh tiao, are what keep us going back.
