Leading up to September's Best of Dallas® 2016 issue, we're sharing (in no particular order) our 100 Favorite Dishes, the Dallas entrées, appetizers and desserts that really stuck with us this year.

In May 2011, when Osama bin Laden was killed in a dramatic raid in Pakistan, President Barack Obama called his predecessor to privately deliver the news. George Bush excused himself from his dinner table to take the call on a secure line at home. Nobody at the restaurant knew what was going on; Bush made no fuss as he left behind his habitual order, crab soufflé, and high-tailed it out of Rise.

Receiving phone calls from the president is one of very few reasons to ever abandon Rise’s crab soufflé. The restaurant specializes in soufflé, and they always get it right. If Rise has ever sent out an underdone or collapsed soufflé, we don’t know about it. The crab option is off-menu, but almost always available as a special, whenever they can source quality crabmeat. It tastes like the lightest, fluffiest crab cake on earth.

Go ahead, then. Eat like a president. And if the phone rings during dinner, it might be important.
