Leading up to September's Best of Dallas® 2016 issue, we're sharing (in no particular order) our 100 Favorite Dishes, the Dallas entrées, appetizers and desserts that really stuck with us this year.

In a city of burger joints and blue-collar sandwich shops, Maple & Motor stands out as a winner on the West side. Owner Jack Perkins keeps up rigorous kitchen standards, regulars love the low-key atmosphere and the location near the medical district provides insurance should you decide to finish a whole basket of tater tots.

My go-to order is the flat top brisket sandwich, with moist fatty brisket piled high on a bun toasted just enough to stay intact. It may not be complicated and it may not be gourmet, but the meat is great and the sandwich is damn satisfying. Lettuce, tomato and grilled onions are necessary adds, and if you want to go with the house’s recommended slathering of mayo, balance out the creaminess with a serving of grilled jalapeno peppers.

Of course, it goes without saying that the Maple & Motor flat top sandwich must be ordered with their tater tots, which haunt Observer burger baron Nick Rallo’s dreams.
