100 Favorite Dishes, No. 5: Bacon Egg and Cheese at Start (With Optional Juice)

For last week's Best of Dallas® 2014 issue, we've been counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.

We're really in the home stretch, now. And I thought we could use something wholesome as we get ready to wrap things up. I know breakfast tacos will always capture the hearts of Texans, but here in Dallas the eggs in every breakfast taco I've ever ordered have been dreadfully over-cooked. This cannot stand.

If you want to see what I'm talking about, head over to Start during the breakfast run and order this whole grain muffin. Or if you're on the move, the burrito. Be careful with either, because they're both as likely to leave a little egg on your face as they are in your lap. And that's exactly why they taste so good.

Over-cooked eggs are pretty dreadful. The curds are dry and rubber, and they've lost a ton of flavor. These eggs, on the other hand, are full of life and moisture. There's no way you can finish a muffin without losing a few, but that's OK because the flavor is more than worth the clean-up work you'll have to do with a fork.

That juice you see in the picture is totally optional. But if you've been following along with us through all 100 dishes you could probably use the nutrients. A hundred days of cheese, beef and other grease producing foods can really weigh on you. What's the harm with some spinach, carrots, apples and ginger? If the flavors don't work for your meat addicted palate that's OK, too. It's liquified so you can chug it.
