100 Favorite Dishes, No. 7: The Sliders at Easy Slider

Let's be honest. The term "slider" doesn't exactly scream refined. The diminutive burgers are often dry, confusing, and almost always less satisfying than a regular burger. What Texan would drive a smart car when given the choice to off-road in a pickup truck?

Somehow the sliders that are passed through the window of the Easy Slider trucks (there are now three) taste a lot bigger than they look. Those patties are thick as far as slider patties go, and they're perfectly cooked instead of griddled to death as is the standard procedure for radially challenged burgers. That means they're pack a lot of flavor. It also means they're juicy.

You could probably stop right there and have a fairy tale food truck story worthy of the Brothers Grimm, but instead the folks behind easy slider take their sliders to the next level and beyond. The French Revolution, pictured above, makes use of prosciutto, gooey gruyere cheese, grilled red onions and like any good Texan burger mustard. (Dijon, of course.) Make sure you get all your pictures taken, because this one will disappear within seconds of taking your first bite.

But no worries. The best thing about sliders is you can eat more than one and not feel like a fat-ass after. And you will be having more than one.
