There's no way to construct a list of 100 Favorite Dishes without including the delicious tacos that make their way out the front door of La Nueva Fresh and Hot. They come out the door because there is no counter or seating inside, but eating a meal on your feet is a small price to pay when the food is this good.

You wouldn't want to eat inside anyway, because the ambient temperature creeps far north of a prison hot box in August. It's a punishing environment, but the source of that heat is the source of the most delicate tortillas you can buy in Dallas (make sure to take extras home) and those tortillas are half the reason La Nueva serves some of the best tacos.

Get the guisado verde. Of all of the fillings you can choose from the thick, green pork stew seems especially suited to these tortillas. It's bright and tangy, and the excess moisture gets soaked up into the tortilla so that taco filling and masa become one. It's a beautiful thing that will be gone in an instant, so be sure to get some chips and salsa to console yourself at home.
