Bijoux's new menu makes for interesting exploration because most of the entrees are offered in modestly priced half portions. You can order a full plate of veal cheeks if you like, but a half comes with two braised cuts (a whole cow's worth), which is really plenty when a dish is as heavy as this.
Cheeks are fatty, with plenty of collagen that imparts a viscous glassy quality to their braising liquids. Who care's if this dish is woefully out of place on a summer menu, 100 Favorites will be over by September and this is a great plate. Put it in your back pocket and make sure to order these cheeks this fall.
