I'm not going to spend a second trying to point out Dallas' best Elotes rendition; the Mexican street food's greatness is derived partly from its ubiquity.
That it's a perfect dish helps, too. Warm, sweet corn hit with mayo and sour cream for body, dried cheese for umami and salt, and lime and hot sauce for acid, make for a balanced and compelling flavor profile. Whether you like the sexed up version served at Velvet Taco or prefer yours from a tired cart in a Styrofoam cup, you should thank the gods that elotes are available everywhere.
