Leading up to September's Best of Dallas® 2016 issue, we're sharing (in no particular order) our 100 Favorite Dishes, the Dallas entrées, appetizers and desserts that really stuck with us this year.
Dallas is losing its mind over ice cream sandwiches right now, from Joy Macarons' macaron ice cream sandwich to the warm doughnut filled with ice cream at Hypnotic Emporium. But quietly, amidst the endless trendy choices, Carnival Barker's Ice Creams has been churning out an ice cream sandwich that may rival them all.
It starts with quality ice cream, no premade mixes, no preservatives, no bull. When it's frozen, it's nearly rock solid — which is liable to make ice cream fiends' forearms ache from the memory of tough scoops when they order one of these sandwiches, which are made to order.
"Ice cream today is not the ice cream we were eating 25 years ago,” Barker recently told the Observer. “It’s a chemically engineered way to make money. It’s gross and disgusting and engineered to be soft. But when you use real ingredients, it doesn’t freeze soft, it freezes.”
For the sandwich, heaping scoops of ice cream (go for the rich, warm vanilla) come on two Rice Krispie treats made in-house. As it turns out, Rice Krispie treats make a perfect ice cream sandwich — they're not too sweet, they don't get soggy and they hold the sandwich together quite well.
Despite what's popping up around DFW, an ice cream sandwich this good doesn't come along everyday.
