Recovered completely from a motorcycle accident, Shuji "Elvis" Sugawara still draws crowds with specialties like his Elvis Tuna Tartare, a sumptuously simple preparation not unlike a fresh fish nacho that disappears as fast as its Mexican counterpart at a football game. Unlike his namesake, Elvis doesn't offer a peanut butter and banana sushi roll, but like him, he still knows how to please the public, thank you very much.
