As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. You've got your fried chicken. Your gravy. Crispy waffles. Maple syrup. Man, anything this decadent and sensually satisfying usually requires body oil (and is illegal in 19 states). Recently at City of Ate we examined various versions of chicken and waffles -- yeah, our job is tough -- blazing a trail of comfort food across the city to find the best take on this venerable soul food favorite. We settled on the Victor Tango's as the best in town, and this has held true even though we sampled several after-the-fact challengers. The juicy and heavily marinated chicken breast pieces are gently fried, nestled onto a plate of crisp, fresh waffles then drizzled with a thin but creamy panceta gravy and served with a side of real maple syrup. No matter how much lipstick is put on the hog, it is still a simple plate of chicken and waffles, and Victor Tango's still does it best. Simply perfected and executed well with each plateful.
