The Easy Slider food truck hits the streets in Big D today for their first lunch service. Co-owners Miley Holmes and Caroline Perini worked together at the House of Blues and decided to cash it in and put it all down a bright blue food truck and sell small sandwiches.

"We realized early on," Holmes said, "that we were going to have to pass up on business opportunities if we didn't completely commit."

So, after months of getting their truck ready and perfecting their slider recipes, these women are all in and ready to roll.

The Easy Slider menu is one-half beef with items like the Sweet & Lowdown, which has goat cheese, bacon and strawberry jam. The Seven-Layer has black beans, salsa, guacamole, Fritos and grated cheddar. A Steak Sammi has seared beef, grilled 'shrooms & onions, arugula, blue cheese butter and horseradish cream sauce.

On the specialty half of the menu they offer up a veggie, grilled mac and cheese, tuna, a Cuban, turkey and, lastly, "chicken & corn fritter waffles," which are corn fritter buttermilk waffles spiked with hot sauce with fried chicken tenders that are doused in maple syrup.

They will be at the Park Lane Dallas Food Truck Friday from 11 a.m. to 2 p.m. Then next week they have a few dates set for the Dallas Arts District. Follow them here or here.
