Well, it's about to happen. After running FT33 successfully for just more than two years, chef/owner Matt McCallister has announced he'll open his second restaurant by the end of this spring in Deep Ellum.
Filament will borrow from the forage-friendly high-tech approach McCallister has made a trademark at his first restaurant, but with a menu that's more relaxed and affordable. If you always felt uncomfortable walking into FT33 and ordering a ham sandwich, you might be able to get away with it at his new spot.
Think: southern cooking with a mad-scientist flair. McCallister says the kitchen at Filament will focus on ingredients from the South. He offers spicy pork sausage with fire-roasted peppers, pickled onions, and yogurt as a possible combination, but notes that seemingly simple dishes will come with a few surprises.
The space is exciting, too. Expect a massive horseshoe-shaped bar, which will seat 24 drinkers. The curved shape and large size could make this bar one of the most social places to eat in town. And glasses will be filled by a sizable wine list, and rotating selection of craft beers.
All of this will be packed into an old machinist shop whose weathered brick walls and beams will be left exposed in the dining room. Dinner service is expected to start in the spring of this year, and a basic website has been set up for the restaurant.
