That, of course, means pint after pint (well, not pint--it's the U.S.--but you get the point) of Guinness, that time-consuming, two-stage pour. Fortunately, Lochrann's owner worked for the famous Irish brewery for 15 years. So Maddox and her colleagues are never allowed to serve a flawed pour.

No matter. The Richardson native has been bartending for a decade now. Anything you throw at her, she can handle--even when the women of Frisco start dancing on the bar...

1. Is it difficult to pour Guinness? It's relatively easy. It just takes time.

2. Do some people complain that it takes so long? Well, if they're not regular Guinness drinkers they will sometimes, so I have to explain. But the Guinness drinkers know that it takes time and they thank you for not rushing it. They actually determine where they're going for a drink by who pours a good Guinness.

3. How 'bout Bud Light? Do people come in and order that? A lot. But I just inform them that it is all imports on draft.

4. Just how is an Irish pub different from other pubs? The atmosphere. They call it Craic [she pronounces it 'crack']. That's Gaelic and it means good times. It's good Craic, right? That always leads to a good time.

5. Who tips the best? Drunk people. But Guinness drinkers tip really well if you pour it right.

6. Is it hard to always be in a good mood behind the bar? It's not too hard--if you're good at interacting with people. Plus maybe a shot helps--not really.

7. Are female bartenders treated differently? Yes, by the guys.

8. How about the soccer crowd--is it a good one? We get soccer fans before and after games. Well, Sunday after the game it's not as crowded. But if it's a Saturday--packed.

9. What did you think of Coyote Ugly? Fun. I actually went to one in New York. And I think there've been a few nights where we've had girls dancing on the bar here. I think they were drunk. Not in cowboy boots, though.

10. But I thought crowds in Frisco were different. Are they? Yes. They're a lot more family oriented, obviously. We'll have kids in here. That's mostly it.
