100 Favorite Dishes: Bone-In Short Rib at Stephan Pyles

As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 45: Bone-In Short Rib at Stephan Pyles
Nothing is ever as satisfying as beef, especially when it is slow-braised and saturated in its own rich flavors.
This traditionally braised bone-in short rib set atop an oxtail marmalade, garnished with tempura fried okra and goat cheese chimichurri can be found on the Texas legends menu, lovingly prepared for us by Stephan Pyles executive chef, Matt McCallister on a recent visit. It quickly became one of our fondest meals in recent memory.
The slow braise ensured that the rib resembled beef flavored butter, set off by the addition of more beef in an oxtail marmalade so intensely rich that our meat requirements were met at least for a few days.
