100 Favorite Dishes: Fried Green Beans at Local
As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 72: Local's Fried Green Beans
It's a menu item found at various restaurants in and around Dallas, but no one does it quite like Deep Ellum's fine-dining jewel, Local.
Chef Tracy Miller's famed fried green beans are a consistently strong cornerstone dish of her pride-and-joy restaurant. Locally grown green beans are double-coated in her unique batter recipe then fried to a crispy golden finish. What sets the end result apart from other restaurants' versions is Local's thick crunchy battered crust, which besides from being miraculously non-greasy, protects the sweetness and bite of the legumes. A creamy dipping sauce of thyme and garlic aioli completes the dish. Local's fried green beans possibly may be the crowning accomplishment of Chef Miller's culinary philosophy: simple, yet skillfully, made food.
