100 Favorite Dishes: Hamburger at Adair's Saloon

As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 46: Hamburger at Adair's Saloon

Unless you count the whole jalapeño speared by a toothpick to the top side of this burger, there is nothing fancy about the burger served at Adair's, Deep Ellum's oldest honky-tonk. It's just a thick slab of juicy meat, cooked about medium, with a fresh bun and the traditional lettuce, tomato and a thick cross section of white onion. Feeling fancy? Add a slice of American cheese for a quarter extra, or add mayo to or substitute it for the default mustard. That's the extent of your customization possibilities. It's big enough to be filling without reaching outlandish proportions. And there's no pepperjack or cheddar, no bacon, and sure as hell no guacamole or sauteed mushrooms to further gourmet-ify this simple, humble, all-American sandwich.

By keeping it simple, Adair's keeps it fool-proof, and you can always count on their burger for a rich, satisfying meal. Add an order of the seasoned wedge-shaped fries and a $1.50 draft at happy hour and you've got a meal fit for a honky-tonk king, at a price even a Cheap Bastard can approve.
