100 Favorite Dishes, No. 28: Hummus and Super Bread at Pepper Smash

Before dining at Pepper Smash, the comic-book-themed-cocktail-den-restaurant-monster way up in Plano, I had never heard of nann pita, but that's what the menu says accompanies an order of hummus. Typically I view hummus served outside of restaurants that specialize in Mediterranean food to be the single most boring dish a diner can order. Even in ethnic restaurants this dish can be as dull as rice cakes and celery sticks. Pepper Smash's version destroys that notion forever, though. And it starts with that amazing bread.
Nann pita is a very nann-like bread. It's soft and bubbly and cooked in a tandoor oven just before it shows up at your table. It's also very pita-like but probably mostly because it's served with a big dish of hummus. This isn't grocery store hummus, though. It's not the shit they serve at bars to people who drink skinny cosmos by the bucketful either. It's a thick, impossibly smooth puree that tastes primarily of dried chickpeas, cooked until soft, and accented very subtly with lemon, garlic and tahini.
This is hummus as it should be.
