100 Favorite Dishes, No. 31: The Crispy Duck At Bangkok City

I still regret my decision sometimes, when I sat at the table at Bangkok City and ordered four stars of heat for a duck dish after my waitress called my bluff. I was trying to convince her that I could handle the burn, so she told me I could order as many stars as I liked. She even told me one crazy customer had ordered 17. I couldn't comprehend what that meant so I stuck to the menu. Now, every time I order Thai I wonder what would have happened if I'd gone all in.
Maybe my timid behavior was a good thing. I'd probably have missed the subtle flavors and textures that made this dish one of my favorites if I'd ordered it thermonuclear. The duck skin was so crisp it stood up to the sweet brown sauce it swam in and reminded me of the skin on southern fried chicken. The crispy basil leaves were so aromatic they scented the entire dining room. Capsaicin regrets aside, it was a memorable dish, and easily one of my 100 favorites.
