100 Favorite Dishes, No. 34: DIY Fried Chicken Taco at Pollo Campero

Don't look for this dish on the menu of Pollo Campero. If you want this taco, you're going to have to make it yourself. Order a fried chicken dinner and be sure to take the tortillas instead of the dinner roll. You should get the dark meat, which is more moist, but the skin across the board is impossibly crisp. While you wait for the chicken to arrive,grab cilantro, onions and your favorite salsa from the condiment bar. The dark green one with black flecks of fire roasted pepper skin is the best but they're all quite good. Make sure to grab a fork too.
When your chicken arrives use a fork to scrape big chunks from the bone. Make sure you get plenty of skin. If you grab some cartilage, that's OK. Heap as much of the chicken as you can into one of the tortillas, top it with a healthy pinch of cilantro and onions and then hit it hard with your chosen salsa. Relish in the salty, crunchy skin against tender, juicy flesh. Note how they acid in the salsa wakes things up a bit. If you like, hit it with a little lime as well. Now things are brighter. And I promise you, the taco you're eating right now is better than those found at most taquerias in Dallas.
