100 Favorite Dishes, No. 60: Deviled Eggs At R&D Kitchen
To prepare for this fall's Best of Dallas® 2012 issue, we're counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.
Deviled eggs are seemingly on every bar menu, but many of them come up flat. This is not the case at R&D Kitchen, where this simple snack gets elevated a touch while remaining true to its picnic-basket roots.
As soon as you take your first bite, sweetness is immediately apparent. The kitchen uses a sweet house-made relish that give these eggs a distinct personality. I joked and asked the kitchen for the recipe when they told me they made the relish in house, and the bartender told me I could make something similar by folding hot chilies into store bought sweet relish. (File that tip away for your next summer cookout.) A tiny dice of celery offers a final twist, lending cool, watery explosions to every bite.
