As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 8: Soba Sampler at Tei An
There are dressier items on the menu at Tei An, including a gutsy carbonara, but few preparations showcase the noodle house's beautifully-made soba as well as a simple sampler plate. Here, a tangle of chewy, earthy buckwheat noodles is chilled and served alongside four dipping sauces, all as elegant and delicate as the noodles themselves. There's a sleek black sesame sauce, the color of wet asphalt, and a punchy sauce made with Texas pecans. And when the soba's gone, tradition calls for filling the sauce cups with hot water to create instant soups.
