You know the story by now. Chef gets tired of the late hours required by positions at Central 214, Pappas Bros. and the like, and sets out to create a restaurant of his own that's a little more conducive to raising a family. Crossroads diner is born, and suddenly the grand slam at Denny's starts to look a little beat.
Tom Fleming's Crossroads has raised the bar for diner food in Dallas, and his busy dining room proves that many diners in the area want food with some thought and care put into it -- even if it's just two eggs with toast or a simple corned beef sandwich.
Quiche may be something you wouldn't expect to encounter in a diner, let alone a quiche that's put together as well as this one. The crust is flaky and tender, the spinach and ham eat with integrity, but most importantly the custard that makes a quiche, quiche, is bouncy and moist. All together it's a delicious alternative to your standard diner breakfast.
And that corned beef is no slouch of a sandwich either. The meat is cured in house and seasoned quietly -- you wont be overwhelmed with spices or other flavorings -- and then it's piled high on well-toasted bread with melted Swiss cheese and that's it. When your waitress offers mustard take it, and slather away to your heart's content. Your taste in diner fare has just been elevated. There's no going back now.
