Targeting residents of Dallas' high-income 'hoods, Papercity, a clone of a slick rag spawned in Houston, will spare Dallas restaurants blood-letting criticism in its dining coverage, according to editor and former Dallas Observer reporter Rebecca Sherman. Instead, the bimonthly urban-lifestyle mag, with an expected circulation of some 85,000, will zero in on local restaurant gossip for the see-and-be-seen set. "The idea is to write about restaurants that are really new, write about what's interesting about them, who goes there, and what they look like," says Sherman. "There might be...a few irreverent things now and then, but it's not going to be critical." Launched four years ago in Houston by former Ultra magazine editor Holly Moore, Papercity will also include articles exploring national dining trends by Esquire magazine restaurant critic John Mariani.
