First it was scotch (single malts, the more obscure, the better), then it was the martini (in 100 high-end variations), then bourbon (single-barrel, please). The trend is toward connoisseur sipping, not guzzling, and the latest liquor to climb the ladder of taste is tequila and its sister, mescal. These days, tequila is as carefully crafted as wine, and is the new cool drink for sipping straight, like a snifter of brandy. The Wyndham Anatole Hotel is right on top of this trend: The Tequila Bar has been added to the newly refurbished La Esquina Mexican restaurant, and it features four mescals and 15 premium tequilas.
