A reporter for The Dallas Morning News' crime blog tweeted at Lockhart Smokehouse asking if they had any public comment on the incident. The response:

Gonzaba is a manager and bartender at the popular Oak Cliff barbecue restaurant. According to the police report the knife was approximately 18 inches in length with a wood handle and a jagged blade. Sounds a little bit like a brisket knife?
