Mother Saucer

Haute-chef Marie-Antonin Careme may have classified all sauces into four groups of "mother sauces" in the early 1800s, but as far as I'm concerned--when done right--there's only one category of sauce: More, please. If you've ever hankered to learn the ins and outs of prepping bechamel or hollandaise like a pro, then check out Southlake's Central Market, 1425 E. Southlake Blvd., which is offering a two-hour Mastering Sauces course. The class starts at 6:30 p.m. and costs $45. For more information, call 817-310-5665.
