Last week we noted the passing of Russell Fenton, the man who put the "Rusty" into Rusty Tacos, among other Dallas area restaurants. This week Velvet Taco has announced its weekly special taco has been created with Fenton in mind.
Every week, Velvet Taco creates a taco based on seasonable ingredients, a new recipe idea or whatever other madness inspires the taco cooks at the time. This week's special is the "Rusty Taco," stuffed with achiote pork shoulder, avocado crema, grilled pineapple, queso fresco, fresh cilantro and pickled red onions. It's a lot for one tortilla.
"Rusty was a class act and his fingerprint will be on the restaurant business for years to come," said John Franke, the corporate chef of Fork It Over Restaurants, which owns Velvet Taco.
The Rusty Taco will be available till July 7 and half the proceeds from its sales go to the educational trust fund that is set up for Fenton's daughters. The goal is to sell 500 tacos -- enough to raise $1,000. Here's hoping they sell 5,000 tacos. College costs a lot more than it used to.
