It was back in February that I dropped into Spoon after the dessert options at the previous restaurant had disappointed me. The White Album, a creation by pastry chef David Collier, was so impressive I devoted a story to the dessert, but I never thought i'd write about it again.
In most fine-dining restaurants dishes constantly evolve as chefs strive to keep things new -- a constant push towards self improvement. The same is true at Spoon, but after a phone call today I was happy to hear that the White Album lives on.
Collier doesn't know the life expectancy for the dish, but he does see it on the menu for the foreseeable future. Expect creamy, coconut-laced beads of tapioca layered on sweet mango that pops out like a golden sunrise with the urge of a spoon. The frosty quenelle packs more coconut flavor, this time as a sorbet, and a subtle hint of pear hides in that crumbled merengue that looks like packed, powdery snow. It's beautiful.
Of course this is just a fraction of the experience you have at Spoon when you order dessert. Expect tiny cookies and other extravagances before and after the White Album arrives. It's one of the happiest endings in all of Dallas, and it's definitely one of my 100 Favorite Dishes.
