Remember your mother's breaded pork cutlet? She probably baked it in a Pyrex dish on Thursday nights, changing things up now and then with some ideas she got from Women's Day. Reach deep into the recesses of your mind and completely remove that food memory forever. There's a new pork cutlet from Crossroads Diner that deserves some real estate in your temporal lobe. And it goes by the name breakfast schnitzel.
You know you're in a good diner when your waitress (Hi, Dee!) apologizes for a five-minute wait for your plate. She asked if I needed my lunch on the quick, but I assured her I did not. A bevy of classic diner plates, stacked tall with onions rings and other fried things, whisked by my table for the next few minutes leaving me longing in their wake, but the arrival of my breakfast schnitzel tempered all sadness.

The pork was pan-sauteed into a deep-brown crust and came perched on a bed of wilted spinach in a swamp of thick, cheesy, gritty, grits. It was crowned with a perfectly cooked egg, laced with lemony Hollandaise that jiggled in anticipation as it hit the table. The yolk gushed when urged to do so with the edge of my knife, washing my plate in a slow-motion tide of yellow that tied everything together. This dish will stay with me for some time.
I'm sorry, Mom. Your pork chop will never seem the same again.
