(Mark Bittman as quoted in the March issue of Body + Soul, defending the oil companies and chemical plants unfairly blamed for the damage wrought by farms...and forgetting that some of those who forged great crimes against humanity--such as Hitler--were vegetarians. But that's an aside. Slaughterhouses often deserve criticism. On the other hand, farm raised fish may alleviate the threat of overfishing. Clearly the celebrity of minimalism is getting to the man.
