Leading up to our annual Best of Dallas® issue, we're counting down the 50 most interesting restaurants in Dallas. These spots bring something unique or compelling to the city's dining scene, feeding both your appetite and soul.

The best bites served at Bambu are the ones you have to assemble yourself at your table. The Isaan sausage for instance, should be eaten with a spoon, each bite adorned with fiery chili, ginger strips, onions, limes and crunchy peanuts. The lime pops with acidity, the peanuts add earth, all while your mouth bathes in a warm glow.

The catfish requires some table-side adjustments, too. The fish is fried twice and shredded, and the flesh is crunchy like panko breadcrumbs. A sweet sauce served on the side is ladled over every bite just before you eat it, helping maintain the texture.

You can go to Bambu and order egg rolls and dumplings and finish it all with some mango and sticky rice, but you can do that at any Thai restaurant in Dallas. Ask your waiter what's special and so long as you've convinced him you're an adventurous diner, you'll be guided toward interesting and unique dishes.

With a great staff that's young, full of energy and ready to guide you, Bambu is more than worth a drive to Richardson, and locals know they have a real gem. Score a seat out on the patio when the weather is nice and let your Isaan adventure begin.
