I've written about the lobster roll at Rex's far too many times to not include it in the 100 Favorite Dishes list. It's a high-quality sandwich that's perfect this time of year with a super-cold, crisp, light beer.

While the lobster comes from New England (by way of Canada) the roll is homegrown rather than shipped in from up north. Top-split buns are hard to come by in Dallas so the folks at Rex's commissioned a custom roll from Empire Bakery. The results may not be authentic for lobster roll purists, but the results speak for themselves. Add barely dressed, lobster salad with huge hunks of shellfish to that buttery bun and you have the best seafood sandwich in Dallas.
