To prepare for this fall's Best of Dallas® 2012 issue, we're counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.

It could just be the picture. I've admitted my obsession with it before. There's something about that deeply honeyed skin: you can almost see the crispy texture, and how it would crunch and crackle as you stab it with your fork. And the way the gravy comes to life. You can watch it flowing away into the blurry background.

It's more likely that the chicken and waffles at Johnathon's taste so damn good. The gravy is rich and full of flavor and trickery. (I was convinced there was pork fat in the mix, and I was dead wrong.) The chicken is packed with flavor, too, and moist from a bath in a Tabasco-laden buttermilk.
