As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 73: Rex's Lobster Roll

In the land of beef and more beef, Rex's Seafood Market is a welcome oasis in Dallas.

Specifically, an oasis where a beautiful plate "decorated" with greens awaits you, and the main attraction is an opulent sandwich filled to the brim with lobster. If the picture of Rex's lobster roll looks amazing, it's because the restaurant's owner and namesake, Rex Bellomy, does not skimp on quality. Unlike other lobster rolls, Rex's rendering is a celebration of the lavish crustacean. Thick pieces of sweet plump lobster meat, slightly seasoned with Rex's homemade rémoulade sauce, celery and mayonnaise, are stuffed to capacity into a toasted New England-style hot dog bun. Served at the restaurant on Fridays only, the cooked lobster meat is flown in from Boston weekly and brought directly to your table. Well, we might have skipped some stages in between, but by the taste of the sandwich, you wouldn't be able to tell.
